I am not a huge breakfast eater. I’m always a HUGE breakfast for dinner eater though, and since it’s been so hot, I’m looking for ways to not have to keep the stove on for long amounts of time, but still get great things into our system like protein, and snack types, like bacon. Most healthy meal ever, probably not, but it’s not something that we’ll be having every night for dinner, is it?
I was able to make this while we were on vacation a couple of weeks ago, and while it wasn’t my normal setup (photo areas, etc) it wasn’t enjoyed any less. While we were at the grocery store, loading up on groceries for the week, I picked up an avocado, and a pack of thick sliced bacon (is there any other?) for these sandwiches. This is made the same way that traditional BLTs are made, except with the addition of avocado and a fried egg. I happen to like mine over-easy, and that’s the way that I made it. To sandwich all of these ingredients, I used Nature’s Harvest Honey Wheat bread slices, and toasted them to perfection. I was able to get a couple of loaves to try, thanks to Nature’s Harvest and coupons sent.
Order of assembly. Fry bacon, fry egg, slice tomato (a Purple Cherokee from my garden – yes, we brought tomatoes down with us to Oklahoma), pick pieces of lettuce, toast and “dress” your bread. I use mayonnaise – just a thin veil of it, and I’m all set.
I would say bacon is KEY in these types of sandwiches, no? Not just any ol’ flimsy type of bacon, it MUST be thick sliced. If I were in Chicago when we made this, I would have requested a butcher slice mine a little bit thicker. Thick cut bacon makes me think back to the days of eating at the breakfast table with my Granny Blackburn during summers with her. Mor Mor Baby (my mother, for you newbies) will also get a bit nostalgic and fry up some thick bacon for me, whenever I have need to be at her house at the crack of dawn. Food is always such a good gatherer of people, right?
Today, I went out to dinner to start my official month of birthday celebrations, and the Mr. & I went to a restaurant where they had this type of sandwich the addition of pork belly, and arugula, with a garlic aioli. It was so good! I may end up trying that as well. Good food always makes me happy. I’m not embarrassed to admit that.
