Truffle Baked Eggs with Prosciutto

Stick with me here. I’m all about decadent breakfasts, and these truffle baked eggs with prosciutto hit the mark square on the nose. They are rich, creamy and full of so much truffle goodness that you may just fall over. Not only that, I joined forces with Eggland’s Best to create this wonderful dish! We love Eggland’s best for many reasons, but the most important to my littles is the fact that the red “EB” comes on each and every egg that is in the carton.

To create this delicious meal, I used a few staples and of course some luxury items. All were on hand believe it or not, because I’m in a truffle phase of my cooking life. I had shaved truffles on hand that I picked up during one of my many trips to the grocery store, along with prosciutto (a staple, because YUM) and truffle oil, which I now keep on hand as well. A little goes a long way. Trust me. The flavor is just that intense! The kids say that it reminds them of garlic, and I would agree. There’s also some butter, and a bit of creme fraiche in there as well.

In order to make this, you can use oven save mason jars, or ramekins. You’ll need to butter all three mason jars well, so that they will bake and sizzle the eggs just right. After oiling the mason jars, you need to add two tablespoons of heavy cream, and 1 tablespoon of creme fraiche. Crack an egg into each mason jar, top with chopped truffles, a drizzle of truffle oil, and chopped prosciutto, bake for 12 minutes at 400 degrees in a water bath, and you have yourself a breakfast, lunch or dinner entree fit for royalty. Season to taste with salt and pepper, and you’re set!  I would serve these up with toasted breadsticks for dipping and be in heaven.

By choosing Eggland’s Best eggs over ordinary eggs, you are getting an egg that is fresher, tastes better, and contains more vitamins and nutrients. Compared to ordinary eggs, each Eggland’s Best egg offers four times more vitamin D, more than double the omega-3s, and contains 25% less saturated fat.

Recipe entries must have a minimum of two (2) whole Eggland’s Best eggs, and at least one (1) locally sourced ingredient that is either grown or manufactured in their home state/district/territory.

Eggland’s Best will be accepting entries for the 2016 Eggland’s Best “America’s Best Recipe” Contest from February 8 to April 29. All recipes will be judged based on creativity, inspiration behind the local ingredient used, and the integration of that ingredient into the recipe. Winners will be announced December 13.

I like scrambled best, then I like fried hard in between 2 slices of bread, cheese, and ham or bacon too, and thirdly hard boiled - just the whites with salt.

I used to help my mom with her poached eggs and have been pondering if i'm missing out but I really don't think I'd like runny eggs, nor do I like the yolks of hard boiled.
