Summer is officially over, even though it keeps coming back to tease us a few days each month, but I think it’s gone for good. I was attempting to get this post up for over a month now, but time just gets in the way sometimes. Especially when the burgers disappear faster than you can photograph them. Have you ever tried taking pictures of food that smells really good? It’s like that all of the time here lately. I realize that we are big foodies. We LOVE a good burger here in our house and LOVE Red Robin for those burgers. They are a sweet treat for us when we’re having a particularly stellar month or months here. For this burger, I used PeakFection Guacamole to recreate the burger that I almost always order whenever we visit the restaurant.
If you’re anything like me, you love avocados. On everything. In salads, on toast, on sandwiches, everywhere. There’s something so awesome about the cool creamy flesh of this fruit. I can recall the first time Shomari took me to the restaurant and I sort of scoffed at several things. The fact that they added guacamole to a burger, and that I could get it topped with an egg (something which I have come to love as well, but didn’t do for this burger.
The recipe is simple, you need to gather your favorite burger meat (or frozen burgers – for convenience we used Bubba Burgers) red onion, PeakFection Guacamole (that stays fresh in the fridge until you open it!,bacon, buns – toasted, cheese, tomatoes, and whatever condiments you can’t live without. I’m a mayo type of gal, and that’s it. No ketchup, no mustard. Just plain mayo, and I’m okay.
Grilling your burger to your desired doneness (I’m a medium ) and frying that bacon to a crisp is also necessary for you to get the tastiest burger ever. The PeakFection is located in the deli section of your Kroger brand grocery store – for me that’s Food 4 Less, and also includes salsa for those of us that are a little bit busier during the school year. So no matter how crazy your day may be, you’ve always got a fresh and delicious solution at your fingertips.That helps us immensely when time is limited or avocados are a ridiculous amount in general.
Are you a fan of guacamole? I know that most purists will say this is a no-no, but I can assure you, this guacamole wasn’t creamed to oblivion, and it was still basic enough for you to add a spin to it if you wanted. It does come in traditional and spicy, and I assure you, what we didn’t use on burgers, we devoured with chips. As a matter of fact, it may be time to break out the grill again – yes, even in 30 degree temperatures. We’ll also be breaking out the fresh guacamole, and enjoy it like the thermometer says 75.
