It’s almost the end of football season, and the Big Game is almost here, and I STILL have recipes for you! Today, I’m sharing Pepsi glazed wings, fried SNICKERS, Skittles Lemonade, and TOSTITOS chunky salsa in scoopable chips! I’m most excited about the sticky sweet wings that are sure to be a hit at any sports gathering you may have, but everything I have tasted made is absolutely delectable. It makes having to settle down and watch The League on off days bearable. I think those guys are just as passionate about football as Mr. Houseful, and that’s saying a lot. Of course I found all of my game day favorites at my local Walmart and even picked up some extra just in case extra people stop by.
First things, first, let’s showcase these wings. Made with my favorite carbonated bevarage – seriously, my in laws know to have a case of Pepsi™ for me whenever we have a gathering at their home. Adding it to a glaze for party wings was a no brainer. I started with party wings (wings that are separated at the joints already) and seasoned them well. I just used seasoning salt and pepper because they were going to be put in a marinade right away. Marinade consisted of Pepsi™, soy sauce, ground mustard, grated ginger (tip: use frozen ginger to make grating easier,) garlic, tomato paste, and apple cider vinegar. You can do this for an hour, but I find that overnight or at least 8 hours really does the trick. You just need to trust me on this one.
Cook for 30-35 minutes on 450 until crispy. While the wings are cooking, you’ll want to heat the Pepsi, soy sauce, and rice wine vinegar in a sauce pan until it’s reduced greatly. It should take 15-20 minutes. After the wings are cooked, toss them in the sauce, and then blast them in the oven one more time so that you can have that glaze REALLY cooked in!
- Chicken & Marinade
- 4 lbs party wings
- 2 tbs seasoning salt
- 1 tbs ground black pepper
- 3/4 cups of Pepsiâ„¢
- 1 tbs grated ginger
- 1/4 cup soy sauce
- 1 tbs ground mustard
- 1 tbs apple cider vinegar
- 1 tbs tomato paste
- 3 cloves garlic minced
- 3/4 cup of Pepsiâ„¢
- 2 tbs soy sauce
- 3 tbs rice wine vinegar
-
Season chicken with seasoning salt and pepper.
-
Combine all marinade ingredients in a large food storage bag and seal. Refrigerate overnight.
-
After refrigeration, preheat oven to 450.
-
Place chicken sections on cooking grate and cook for 30-35 minutes or until crispy.
-
While chicken is cooking, combine all ingredients for glaze in a medium saucepan and heat over medium heat until reduced.
-
Toss cooked chicken in the glaze, and return to 500 degree oven for 5 minutes.
-
Remove from oven, let cool, and enjoy!
We topped everything off with Skittles lemonade which I made by simply counting 20 Skittles in the same color, adding 2 tbsp of lemon juice and allowing it to dissolve into a rainbow of colors. After the candy dissolved completely, I added water, stirred and enjoyed.
Our meal was rounded out with TOSTITOS scoops and medium chunky salsa. I have to admit that while prepping for our foodie photo shoot, I couldn’t stop snacking on these! They would be a great chip and dip for those really snacky football fans that you invite over to watch the big game with you. You get salsa with every chip, and don’t have to worry about double dipping!
