Cooking with kids isn’t something that I’ve found many of my friends enjoy. I can understand. Prep can be slow going, and those little hands and bodies full of excitement can spill more than they fill, and well, it challenges our need to finish in the quickest way possible. My children love cooking. Well, the girls do – and not because of gender-pushed agendas, just because they do. My baby boy cooks when he feels he can snag whatever we’re making before it’s offered to the rest of the family. My oldest child cooks when he has no choice. Usually when we’re out of town – or we’re on a date. Yes, I’m making sure that my children are able to fend for themselves when the time comes that Mr. Houseful and I run away and leave them all alone.

Peapod is helping make that dream come true. While I do love grocery shopping, shopping with my cherubs isn’t always as sweet as the desserts that we make, so I appreciate being able to order and have our groceries delivered to my front door. With the snow and rain that we’ve been getting in Chicago lately, it makes life so much easier. The snow is pretty and all, but it’s a beast to drive in! Also, picture it. The hubs and I run off for a long vacation and ORDER GROCERIES FOR THE KIDS FROM OUR JACUZZI! How amazing is that?! 

Ordering was super easy. Log into Peapod, check off the groceries I needed, and pick a delivery window. That’s it! I’m going to go on record to say how happy I am that they now deliver to my zip code, because a couple of years back, they didn’t. I love that they are expanding their service. 

Our order consisted mostly of dessert items because it’s winter, and fun to pack on the pounds. Don’t argue with me on this. We chose to focus on a dish that didn’t involve turning on the stove or the oven, and also didn’t involve knives (even though I let my children use them) because this is the internet, and opinions abound. We’re making these Red Velvet Cheesecake Trifles (or triflin’ cheesecake as Mor Mor Baby calls it) and everything can be done by the kids! Even the measuring.

Recipes like this create a focus for a family forward meal (say that three times fast,) and gives little ones the confidence they need towards independence. Plus, it’s just fun to see what conversations you can have while making something that everyone is going to eat.

Red Velvet Cheesecake Trifles

Red Velvet Cheesecake Trifles
Yield: 8 trifles

Red Velvet Cheesecake Trifles

Ingredients

  • Cream Cheese Base
  • 2 - 8 oz blocks of cream cheese - chilled
  • 1/2 cup of sugar
  • 1/4 cup of cocoa
  • 2 tsps of red food coloring
  • 1.5 tsps vanilla extract
  • Whipped Cream Ingredients
  • 1 cup of heavy whipping cream
  • 20 Oreo sandwich cookies
  • 2 tsps vanilla extract
  • 4 tbs of powdered sugar

Instructions

Combine cream cheese, sugar, cocoa and red food coloring in one bow. Mix until smooth


Combine heavy whipping cream, powdered sugar, vanilla extract in another bowl and mix until stiff peaks have formed. Don't overwhip, otherwise, you'll end up with sweet butter. YUCK!


Crush the Oreo sandwich cookies until crumbly


Build Your Trifle


Start in a wide mason jar and build in order - cookie crumbs, cheesecake filling, whipped topping, cookie crumbs, cheesecake filling, and whipped topping. Finish with whipped cream and cookie crumble garnish and refrigerate for 30 minutes.
