We all agree that overall, 2020 has been a dumpster of sorts, right? However, for those of us who are keen on finding the silver linings in things, we know that dumpsters sometimes hold treasures correct? No? Not working? I tried. Anyway, I’m making Dumpster Cookies for my annual #HousefulOfCookies cookie hop, and these have fit my mood for the year. A bit salty, a bit of sweet, a whole lot of unnecessary stuff to make things palatable.
This is totally not the way a baking recipe post should start, but I’m tired, and sad, and mad, and just want to bake until I’m fat from it all. Shall we do that?
Now, stay with me here. Y’all know when I bake, I let you know that you can tweak and do all of that good stuff, and these cookies are the tweaking MASTERS. You can make it with whatever add-ins you want. Add your favorite nut to go with the nuttiness that we’ve experienced. Want some coconut in there? Go for it! what about chocolate chips? THE SKY IS THE LIMIT! But I’m going to throw a curveball because WHY NOT.
We’re adding potato chips. And good sturdy ones because who doesn’t want a bit of salt to go with the saltiness of this year?
Stay with me. It sounds counterintuitive, and honestly this year has been counterintuitive, but DANG IT we’re baking cookies.

Here’s the recipe – go wild!
Dumpster Cookies
Cookies that reflect the year of our Lord 2020.
AKA - sweet and salty ways to eat your feelings
Ingredients
- 2 sticks butter softened - don't melt, your cookies will come out flat
- 1/2 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tsp pure vanilla extract
- 2 cups all-purpose flour
- 3/4 cup crushed but not ground potato chips
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 teaspoon salt
- 1 cup of chocolate chips
- 1 cup preferred candy (we're using M & Ms)
- 1 cup chopped nuts of your liking
- 1/2 cup craisins
Instructions
2. In a large bowl with a wooden spoon, beat butter, and both sugars together until smooth and creamy, about 2 minutes. Beat in eggs, one at a time, until well blended. Stir in vanilla.
3. In a medium bowl, sift together flour, baking soda, baking powder, and salt. Gradually stir into butter mixture until well blended. Add remaining ingredients EXCEPT for the potato chips and stir until well blended.
4. Fold the potato chips into the batter to prevent extra crushing. You want them to peek through a bit.
5. Refrigerate dough for 30 minutes to chill - this makes a higher cookie!
6. Drop batter by heaping tablespoons or with a 1-ounce ice-cream scoop onto cookie sheet about 2 inches apart. Press tops down with the bottom of a glass to flatten cookies evenly. Bake until golden, about 16 to 18 minutes. Cool on pan for 2 minutes. Remove from pan, and finish cooling completely on wire rack.
