Dairy Free Rice Pudding


  • 1.5 cups of rice - the type is up for debate. I used medium grain
  • .5 cup of sugar - you can use less if you desire. We were going more dessert style here
  • 7 cups of So Delicious Dairy Free Almondmilk
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • pinch of salt
  • cinnamon and nutmeg to top the rice


  1. Rinse the rice until the water runs clear
  2. Put the rice in the pot along with 1 cup of almondmilk, sugar, and a pinch of salt
  3. Cook on low until milk is absorbed
  4. After the milk absorbs into the rice, add 5 more cups of almondmilk (1 cup at a time) waiting for the milk to absorb until adding the next one.
  5. Cook until thick and creamy, and then add final cup of almondmilk and stir to incorporate.
  6. Plate and garnish as desired. Go crazy! Use nuts, berries or spices!
